The Big Boy pour-over coffee maker is designed with a unique bottom structure that utilises a series of tall teeth/ridges to hold the paper perfectly straight and consistently allow for airflow under the bed. While the brewer itself will not clog, if the coffee is ground too fine or the grinder is not of high quality, the paper filter may become clogged. The processing method, roast style, and other factors can cause some coffees to drain slower than others due to varying resistance to water. However, the Big Boy's 8cm opening at the bottom and large exit hole in the middle ensure uninterrupted coffee flow.
Crafted for big brews, the Big Boy is designed for optimal performance with a dose range of 40g-60g of coffee for 600ml to 1 litre. It can accommodate as little as 32g or as much as 80g, but the recommended approach is to use larger pours (200ml+) for best results. For smaller quantities, a finer grind and bigger pours are advised.
The Big Boy's design is intentionally "brutal" – big, toothy, and aggressive – a departure from the brand's typical aesthetic. However, this form follows function, as the optimised, tooth-like structure contributes to the brewer's excellent performance under large volumes. Despite its imposing appearance, the Big Boy delivers gentle drips, resulting in a beautiful and consistent brewing process.
With the right recipes and for most coffees, the Big Boy can brew 600ml to 1 litre in approximately 3-4 minutes. By using the Negotiator system along with a fast paper like the Sibarist FAST, or by adjusting the grind size and pouring volume, this time can be further reduced. The brewer's flexibility allows for experimentation with different brew parameters and paper options, including the brand's flat papers and the Negotiator tool.
The Big Boy is well-suited for a variety of brewing needs, whether it's for personal use with a partner, flatmates, family, or colleagues, or for café operations that require better-quality batch brewing or the ability to brew multiple filter brews simultaneously. It's also an excellent choice for event-based brewing or for those who prefer to brew once a day and take their coffee on the go in a flask.
The design team's approach to the Big Boy project was open-minded, aiming to create a large-capacity brewer for big brews rather than trying to adapt an existing device for increased volume. This mindset challenges the notion that brewing larger quantities cannot produce great-tasting coffee, a myth often perpetuated in the specialty coffee community. The Big Boy is a testament to the team's commitment to innovation and their belief in the potential for exceptional coffee quality, even when brewing in larger batches.
